The 2023 Fongoli 'La Palmetta' Grechetto IGT Umbria is a biodynamic white wine from Umbria, Italy, crafted from 100% Grechetto grapes grown on clay-limestone soils. Hand-harvested in the early morning, the grapes undergo gentle pressing, with only the free-run juice fermented spontaneously using native yeasts in open vats without temperature control or added sulfur. The wine is aged on fine lees in stainless steel tanks and bottled unfiltered, resulting in a dry, medium-bodied profile with aromas of white flowers and stone fruits, complemented by citrus and honeydew notes. It pairs well with seafood, white meats, and savory herb dishes.
