Fruit from the steep, slate-rich Ellergrub vineyard is fermented spontaneously with native yeasts and aged on fine lees to enhance texture and complexity. The wine offers intense aromas of lime blossom, green apple, and white peach, supported by striking minerality and a subtle smoky edge.
