Farmed organically from the steep clay slopes around Chavignol, the 2024 Gerard Boulay Sancerre 'Sibylle' Rosé is made from 100% Pinot Noir vines between 35-40 years old – these are not the youngest vines making an afterthought rosé. Fuller-bodied for a rosé, there is plenty of red fruit, tangerine and rose petals backed by lush minerality from the clay soil. Perfect for salmon and other fatty fishes, as well as cheese, paté, and croquettes.
