COS was founded in 1980 by three friends—Giambattista Cilia, Giusto Occhipinti, and Cirino Strano—whose initials form the winery’s name. Giusto Occhipinti has become one of Sicily’s most influential winemakers, helping prove the region’s potential to produce fresh, complex wines despite its southern location. The estate works organically and biodynamically, never using synthetic chemicals, with Giusto comparing the vineyard to a life savings that must be protected. 

COS’s Cerasuolo di Vittoria is the kind of wine that makes you wonder why you don’t drink Sicilian reds more often. A blend of 60% Nero d’Avola and 40% Frappato, it pours a deep ruby and hits you with aromas of dried cherry, dark chocolate, smoky herbs, and a whisper of licorice if you give it a swirl. On the palate, it’s juicy, bright, and effortlessly smooth - think dried cherry, truffle, and a savory smokiness, all riding a wave of lively acidity.
